Mediterranean Baked Cod Recipe

Simple Mediterranean baked cod recipe makes delicious, healthy baked cod taste like it comes from the Mediterranean.   

– nonstick cooking spray – 1 1/2 pounds cod filet – 1 teaspoon olive oil – 1 1/2 teaspoons Greek seasoning – 1/3 cup pitted Kalamata olive – 1/3 cup roughly chopped drained artichoke hearts in brine – 1/4 cup julienned drained sun-dried tomatoes packed in olive oil – 2 teaspoons freshly-squeezed lemon juice – 3 cloves garlic, minced – 1 tablespoon chopped fresh parsley, or as needed – 4 fresh lemon wedge

Pre-heat the oven to 375°F. Spray cooking spray on an aluminum foil-lined baking pan.

Pat fish filets dry with paper towels. Place cod on baking sheet, lightly oil tops, and season with Greek spice.

Mix Kalamata olives, artichoke hearts, sun-dried tomatoes, lemon juice, and garlic in a small bowl. Spoon mixture evenly over filets.

Bake 14–16 minutes until cod flakes easily with a fork. An instant-read thermometer should read 145 degrees F (63 degrees C) inside.

The baking time may be a little different for filets of different thicknesses.

Use a broad spatula to transfer cod and topping to a serving plate. Sprinkle chopped parsley over top and serve with a lemon wedge.
