Bhoger Mangsho Recipe

At this time of year, holiday spirit is everywhere. Durga Puja is coming, so get into the festive spirit and devotion.  

– 500 gm mutton – 50 gm ginger – 2 bay leaf – 2 cinnamon stick – 4 green cardamom – 2 teaspoon coriander powder – 1 teaspoon cumin powder – 1 teaspoon asafoetida – 1 teaspoon garam masala powder – 70 ml mustard oil – 200 gm potato – 150 gm hung curd – 4 dry red chili – 4 clove – 2 black cardamom

Clean the mutton and marinate it with ginger, curd, cumin, coriander, turmeric, and red chili powder for 6 hours in the fridge.  

Instruction

Peel and turmeric-marinate potatoes. Mix remaining masala with 10 ml mustard oil to produce a thick paste.

Heat remaining oil in pan and cook potatoes till golden brown. Now add ghee to oil in a deep pan.

Cook whole masalas in oil and ghee for a minute. Mix in ginger paste and cook on low for 2 minutes to remove the raw ginger smell.

On low heat, simmer spice paste and sugar for 3–4 minutes. Beat curd and add to mixture; boil until oil separates.

Cook marinated meat in low heat for 10-15 minutes and add fried potatoes. Include water in boil.

Maintain semi-thickness (add water if needed). Finish with garam masala powder and 1 Tsp. ghee.
