Gnocchi Recipe

Gnocchi is easy to create using mashed potato, flour, and egg. My family has used this recipe for decades.  

– 3 medium russet potatoes, scrubbed – 1 ½ cups all-purpose flour, plus more for dusting – 1 large egg – 1 teaspoon kosher salt

Get the items together. Sprinkle salt on the potatoes in a big saucepan and add 2 inches of water to cover them.

Bring to a boil over high heat. Then lower the heat to medium-high and let it simmer for 25 to 30 minutes, without stirring.

The vegetables should be soft but still hard.  After you drain the potatoes, put them back in the pot for 5 to 10 minutes to dry out and cool down a bit.

When the potatoes are cool enough to touch, rub the skins off with your hands to peel them.

Put potatoes that have been peeled through a potato ricer into a big bowl. You can also mash the potatoes until they are very smooth.

Allow to cool a little, for about 10 minutes. Pour in the flour, egg, and salt. Mix the flour in until the dough starts to come together.

Move the dough to a lightly floured surface and knead it gently a few times until it's mostly smooth. Be careful not to overwork it.

Split the dough into 4 equal pieces. Each piece of dough should be rolled out and shaped into a long "snake" that is about ¾ of an inch across.
